The III Food Fair 'Sabor a Córdoba' started this Friday and will last until Sunday with the goal of establishing itself as a major event in the Cordoban agri-food industry, "convinced that this space, which is consolidating in our calendar, is the ideal one to showcase the quality and excellence of what is produced in our municipalities."
This was stated by the president of the Provincial Council of Córdoba, Salvador Fuentes, at the inaugural event, where he was accompanied by the delegate for Economic Development, Promotion, and Employment, Félix Romero. During his speech, he emphasized that this edition features 63 agri-food companies from the province and a comprehensive program of proposals has been designed.
Fuentes highlighted that "'Sabor a Córdoba' is a first-level showcase that has nothing to envy from the major national fairs or other gastronomic references," noting that the evolution of the event "demonstrates its capacity to generate opportunities and business."
The provincial president recalled that the number of participating companies has increased from 40 in 2024 to 63 in the current edition, a leap that, in his words, "reflects the growing interest of the sector and confirms that we are facing a useful tool to make our products visible, open markets, and generate profitability."
In this line, he stressed that "Córdoba pays tribute to the perseverance of the world of gastronomy and to everything that the province of Córdoba represents, which is projecting itself to the whole world without losing its roots and with absolutely admirable levels of competitiveness and talent."
Regarding external projection, Fuentes indicated that "exports rose from 1.2 to 1.4 million euros from 2023 to 2024. In 2025, they skyrocketed, reaching 3.45 million euros. This means that we are in a very open economy to the world and that Córdoba is adapting."
Similarly, he added that "we are an open economy and we are exporting at very significant growth levels, above the Andalusian and Spanish average."
Fuentes also focused on "the close relationship between gastronomy and tourism, highlighting that this has consolidated as the third reason justifying visits to the province of Córdoba, alongside its historical, cultural, and artistic heritage."
Something more than heritage for the visitor
"Every time we attend a national or international fair, we find that those who visit us seek something more than heritage. They seek experiences, they want to know our gastronomy, our landscape, our products, and our way of understanding life," said the president of the Diputación.
In this context, he pointed out that "Córdoba has managed to build a diverse and attractive offer that responds to the new demands of travelers from Europe, the United States, and other international markets, many of whom have significant purchasing power."
Likewise, he reiterated that "we have to ensure that Córdoba's products are on the tables of the best chefs and restaurants, because they are also the best promoters of our oil, our wine, our garlic, and everything we are capable of producing."
The highest provincial official also referred to "the great challenges that our agri-food sector must face, challenges that speak of generational change, technological advancement, national and international competition, the creation of added value, and sustainability and profitability."
"It is the fair of the towns"
For his part, the delegate for Economic Development, Promotion, and Employment, Félix Romero, emphasized that "this is the fair of the towns, this is a public fair model, a model to be able to buy directly from those who generate the most trust, from producers, farmers, ranchers, and the food industry, it doesn't matter where they have their business, but there they, at that point in the province, are creating jobs and from the Diputación de Córdoba we have to promote them, respond to them, and accompany them."
Romero also expressed that "what pride to live in this province where to the north we have the best Ibericos in the world, with a Sierra Subbética to the south that produces the most awarded oils and with a Guadalquivir Valley that produces the best citrus fruits in the world. What luck to be able to travel and share seven regions through the five senses we have, to know its people, its landscapes, its tourism, its daytime and nighttime accommodation with that Starlight reservation. I hope, and I wish so, that this fair continues to gain strength and momentum."
The also president of the Provincial Institute of Economic Development (Iprodeco) has detailed that "there will be a total of 48 activities that we will make available to visitors during the weekend, 28 of them linked to gastronomy and 20 focused on promoting our culture, our traditions, and our crafts."
He added that "we will have cooking demonstrations, tastings, workshops, and performances with the participation of seven Cordoban regions and numerous municipalities in the province. All of this with the aim of showcasing and valuing our agri-food products."
Effort, dedication, and great brands
The Tourism delegate of the City Council of Córdoba, Marian Aguilar, has pointed out that 'Sabor a Córdoba' is "a first-level fair" that "represents our identity, history, culture, and, above all, the effort and dedication of producers and farmers who work day by day to create the best products."
Finally, the territorial delegate of Agriculture, Fishing, Water, and Rural Development of the Junta, Raquel López, has highlighted the involvement of the Andalusian Government through 'Gustos del Sur', "the great agri-food brand that highlights the value of all our products."
In this III edition, the Tunnel of Extra Virgin Olive Oil once again occupies a central place, where the quality of the oils and the variety of a province considered a world reference in this field are exhibited. Next to it is the Wine Tunnel, which this year brings together more than 180 references from 60 wineries. As a novelty, the Eco Route is added, designed to give prominence to 19 exhibiting firms with organic products.
