The national cycle, driven by AUNATUR, will bring together researchers, producers, companies and professionals between November 2026 and June 2027 to address the challenges of sustainable food. The sessions will be held in Torrecaballeros and will be free for the public and professionals until capacity is filled.
What we put on the plate has much more mileage than it seems. Behind each food there are decisions related to its production, the use of natural resources, the conservation of the environment and, of course, our health. But how do we get all these aspects to move in the same direction?
This is one of the questions posed by EatCology, a new initiative that is born in Segovia with the intention of bringing together science, gastronomy and the environment in a single space for conversation. Driven by the association AUNATUR, the I National Cycle of EatCology 2026-2027 Sessions will bring together researchers, producers, professionals, companies and citizens interested in learning new ways to produce, process and consume food, and manage waste.
Under the slogan «Diálogos para alimentar el futuro», the program will be developed at El Rancho de la Aldegüela, in Torrecaballeros (Segovia), through eight meetings, one Thursday each month, which will combine lectures, conversations between specialists and gastronomic experiences.
Sustainability, science and production: an increasingly necessary connection
Sustainable food does not depend only on choosing certain products. It also has to do with how they are grown, what resources are used to produce them, and how surpluses are used.
From this perspective, EatCology seeks to bring scientific advances closer to those who work daily with food, from farmers and producers to cooks, companies and consumers.
The project is also inspired by the One Health (One Health) concept, which is based on the relationship that exists between human health, animal health and the environment. The intention is for the meetings to make it possible to learn about experiences and success stories, share solutions and generate new opportunities for collaboration.
Eight sessions to talk about the future of food
The first appointment is scheduled for 12 November 2026, from 18:30 to 21:00, and will address how to make better use of resources and give a second life to food products and by-products.
The opening conference, titled «Circular Gastronomy: Revaluing By-Products for More Sustainable Eating», will be led by Daniel Martínez Maqueda, PhD in Food Science and Technology and researcher at IMIDRA.
After the talk, there will be a dialogue with Iñaki Espinosa, founder and president of Sqrups, and Gonzalo Múzquiz, technical secretary of Unión Profesional, moderated by Gloria Molina, president of AUNATUR. The program will also include a performance by composer and guitarist José Luis Montón.
One of the moments of the day will be the gastronomic experience «Pastor Tasting: wine, cheese and bread. Flavors with roots», with products from Bodegas Magna Vides, the CRICA cooperative and El Obrador de Palazuelos, prepared with the principle of sustainability and respect for the environment.
Beyond the tasting, EatCology seeks to show how production methods, respect for the environment, and the preservation of food traditions can contribute to the economic development of rural areas and the creation of jobs.
A space open to researchers, companies, producers and citizens throughout all of Spain
Although the events will take place in Segovia, EatCology is born with a national vocation. Professionals, researchers, producers and companies will be able to propose experiences, share projects or participate through exhibition spaces, stands and product demonstrations.
The project has the backing of the Diputación de Segovia, Alimentos de Segovia and the Torrecaballeros Town Hall, as well as the collaboration of the Fundación Caja Rural de Segovia, Segovia Sur and El Rancho de la Aldegüela. It also has the scientific and technical advice of IMIDRA and Unión Profesional.
The eight events will be free until capacity is filled. Interested individuals and organizations may consult the program at www.eatcology.es or contact the organization through gloriamolina@aunatur.com
