The Spanish Association of Olive Municipalities (AEMO), based in Córdoba, has presented this Friday to the entire sector the complete technical study "Approach to the production costs of table olives in Spain 2026". The report thoroughly examines the cost structure of the main existing table olive cultivation models in the country and determines that, depending on the planting system and the harvesting method, production costs range between 0.71 and 1.23 euros per kilo of commercial olives.
AEMO emphasizes that these figures, when related to the recent evolution of prices at origin, allow "analyzing the profitability of the different farms and facilitating better decision-making both by the sector and by the administrations".
The document details the methodology used, breaks down in detail the different chapters of operating costs, and includes the calculations made for each of the analyzed production models, so that it is configured as a reference tool for farmers, cooperatives, companies, public administrations, and researchers.
With this analysis, AEMO reinforces its line of work on production costs of olive groves and offers for the first time a specific framework for table olives, developed with technical criteria and with the aim of providing transparency and knowledge to the entire value chain.

The association aspires to establish it as an essential reference document for the table olive sector, just as it has done in recent years with its studies on the costs of olive groves intended for oil production.
