The consumption of prepared gazpacho and salmorejo has regained ground in the last 12 months in Spain, after two consecutive years of setbacks. Between June 2025 and May 2026, these ready-to-drink preparations increased by 15.2%, reaching 85.32 million liters.
The latest food consumption reports in Spain confirm a sustained advance in the demand for ready-to-eat dishes in households, driven by the lack of time to cook and the preference for practical and quick options. In the period from June 2025 to May 2026, the volume of prepared dishes grew by 5.6%, with an average price of 5.75 euros per kilo or liter, 8.5% higher than in the same period of the previous year.
The figures highlight the remarkable pull of packaged gazpachos and salmorejos, in clear contrast to the behavior of other emblematic dishes of Spanish cuisine. While 85% of the occasions when paella is eaten at home corresponds to "homemade preparation," and 71% in the case of "Spanish tortilla," in gazpachos and salmorejos the opposite happens: the already prepared versions concentrate 76% of the consumption moments.
Their image as a light and refreshing product explains that most of their consumption is concentrated in the warm months. Each Spaniard consumes an average of 1.81 liters of packaged gazpacho or salmorejo per year, of which almost two-thirds, 1.16 liters, are consumed between June and September.
Within that period, July remains the month of highest consumption, with 0.36 liters per capita, closely followed by June, with 0.34 liters. Next is August, with 0.28 liters per person, and at a greater distance, September, with 0.18 liters.
HIGHER REVENUE WITH LOWER PRICES
One of the peculiarities of the market for ready-to-eat gazpachos and salmorejos is that the drop in average price has not prevented a strong increase in sales. Between June 2025 and May 2026, the price was set at 2.40 euros per liter, 2.1% less than in the previous 12 months, in contrast to the overall prepared dishes, whose average price in households rose by 2.7% in that same interval.
Despite this reduction, the strong demand translated into a 12.8% increase in the revenue of gazpacho and salmorejo producing companies, reaching 204.81 million euros.
Regarding the purchase channels, the vast majority of packaged gazpacho and salmorejo intended for home consumption is acquired in large distribution. Supermarkets account for 82.9% of sales, followed by hypermarkets, with 13.4%.
According to the food consumption panel of the Ministry of Agriculture, Fisheries and Food, the typical consumer of these products is over 50 years old and has a medium or high income level. Households formed by couples with children of middle age or older, couples without children, and retirees predominate.
By autonomous communities, the consumption of prepared gazpacho and salmorejo is especially concentrated in Catalonia, Murcia, Andalusia, Madrid, and Castilla-La Mancha.
