El Chato, the well-known restaurant in Bogotá that rose to number 1 in Latin America in the "Latin America's 50 Best Restaurants 2025," will arrive temporarily in Madrid between October 21 and 25.
The presence of the Colombian establishment in the capital is part of the program "In Residence Sessions by Rioja," where chef Álvaro Clavijo will be in charge of starring in the second residency of this cycle in 2026.
The gastronomic event will be held at Semilla Food Studio and is part of the commemoration of the tenth anniversary of this initiative, which invites international restaurants and chefs for a few days to showcase their creations to the Madrid public.
In 2025, El Chato reached number 1 in Latin America in "Latin America's 50 Best Restaurants," becoming the first Colombian restaurant to occupy this position.
For his stay in Madrid, Clavijo has prepared a tasting menu of eight courses focused on products and flavors linked to the biodiversity of Colombia, with ingredients such as mashua, arracacha, guatila, lulo, uchuva, or mambe. Each dish is paired with a selection of wines from the DOCa Rioja, specifically chosen to accompany each stage of the menu.
The proposal starts with mashua bread, arracacha pipián, and beef broth, served alongside Izadi Selección Blanco 2025. Next comes the pig ear with guatila, lulo, and casabe, paired with Marqués de Riscal XR Rosé 2025, while the third course combines heart of palm, fresh macadamia, and pil pil, accompanied by Viñedos Ruiz Jiménez Valyerro 2025.
The journey continues with crab, rice, and kimchi, alongside Alonso & Pedrajo Suañé Blanco Reserva 2021, and continues with snail with uchuva, moss, and chicharrón, served with Castillo de Cuzcurrita Señorío de Cuzcurrita 2021. In the sixth course, beef and ant, corn, and pumpkin are presented, with Aiurri, Alma Carraovejas Salas 2023. Afterward, horseradish, apple, and cucumber are offered, accompanied by Conde de los Andes Semidulce 2003, to finish with mambe, lemon verbena ice cream, and cocada.
