Madrid will be the scene for the first time of Meet Massari R-Evolution, a professional day that will take place on September 14 at the ABC Serrano Space and will bring together some of the most prominent figures in Spanish and Italian pastry around artisan panettone, according to the organization.
The meeting, driven by Molino Dallagiovanna, will combine live demonstrations with a professional debate space on the evolution of one of the products that has gained the most prominence in contemporary pastry.
The event will gather at the same table four references from the sector: the Italian legend of panettone and recognized as one of the greatest Italian pastry masters in the world, Iginio Massari, along with the Spaniards Oriol Balaguer, José Romero Barranco, and Nuño García, founder of Clan Obrador. All of them will analyze how this product has changed in Spain, what importance technique and raw materials have, and what the future of artisan pastry is.
During the day, Massari will prepare a traditional panettone live and a second version with Blackery, the new flour blend developed by Molino Dallagiovanna together with Callebaut - Masters of Taste.
Throughout the event, professionals from pastry, bakery, and gastronomy will be able to participate in a space for reflection, training, and knowledge exchange around artisan panettone, highlighting the key role of flour, technique, and innovation in its production process.
